CapeCook - Rustic  South African Food

Ingredients for pan fried fish:
• 1Kg Kingklip fillets
• ½ cup cake flour
• 2 tablespoons Robertsons Fish Spice
• 2 Eggs, beaten
• 2 tablespoon canola oil
• 1 tablespoon butter

Method:
Mix cake flour and fish spice. Cover the fish fillets completely with the beaten egg, cover with the flour and fish spice mixture. Let it rest for 30 minutes before frying it.
Add a little oil to a frying pan and add a knob of butter, let it melt over medium heat. Fry the fish until just done, flake a piece of the thickest part, if it flakes easily it is done, do not overcook, to ensure you get a thumbs up from your family.

Ingredients for peanut butter gravy:
• 1 cup peanut butter
• ½ tsp Robertsons Garlic Salt
• 1 tsp Robertsons Peri-Peri
• 1 tsp Robertsons Lemon Pepper
• 200ml water
• 200ml milk
• 1 tsp sugar

Method:
Combine the peanut butter and dry spices in a pan over low heat and stir to combine. Mix the milk and water into one container and add the sugar. Stir to dissolve the sugar. Add the milk and water mixture bit by bit into the peanut butter, keep stirring to combine. Bring the heat up to medium-high and cook until thickened. Serve hot over the Kingklip.

Serve with match stick potato and sweet potato chips and vegetables.
