CapeCook - Rustic  South African Food

The milk tart recipe that I used as a starting point was the crust less milk tart I grew up with, and as if a milk tart is not South African enough, I added another South African classic, Amarula.


Ingredients:

3 Tbsp melted butter

3 eggs separated

1 cup sugar

1 cup cake flour

1 tsp baking powder

1/5 tsp salt (1 ml)

900ml milk

100ml Amarula Cream Liqueur

Ground Cinnamon


Method:

Heat oven to 180°C

Beat the butter, egg yolks and sugar together until well mixed.

Sieve the cake flour, baking powder and salt and add to the sugar/egg mixture.

Mix in the milk and Amarula and mix well.

Beat egg whites until stiff and fold into mixture.

Pour into a deep tart dish and sprinkle cinnamon over.

Bake in the pre-heated oven for 40 minutes until set.


(For a more traditional milk tart, use 1 litre of milk, and no Amarula)
